Sponge cake is a classic lemon maderia cake layered with butter cream and strawberry jam.
Chocolate cake is a rich dark chocolate sponge layered either with strawbery jam and chocolate butter cream or with a rich dark chocolate custard.
Rich fruit cakes start with the fruit being soaked in sherry. Brandy is then poured onto the cake over the following weeks. The cake is covered in a generous layer of marzipan before being iced. Ideally 3 months notice is required, however cakes can be ordered with a weeks notice. They just won't have been topped up with brandy for as long. This cake is made with nuts. I can make this without nuts but please be aware that I have used nuts in my kitchen.
